1/2 tsp baking soda
1 Cup Rolled Oats
Unsweetened Coconut Flakes
2 Tsp Chia Seeds
Dash of Salt and Cinnamon
Optional Cranberries or Raisins
Directions

Empty contents of blender into bowl
Stir in egg
Add Oat Flour, Oats, Coconut Flakes, Raisins, Chia, Baking Soda, Salt and Cinnamon
Stir
Scoop into cookies and bake for about 10 mins or until lightly browned
Notes
Sometimes dates stick to the side of the blender so may have to stop and shake the blender a few times until blended smooth. If you can't be bothered to break out the blender chop dates finely. When I do this I like to add 2 Tbsp coconut sugar so the entire cookie has sweetness. Butter is also works if you don't have coconut oil.
