Healthy oatmeal Bites

Do you ever want something sweet and tasty during the day without throwing your whole day and nutrition off track? Do you ever indulge in something sweet only to regret it moments later or feel an energy crash shortly after? These cookies are the answer! If you don't have the time or energy to home- make anything go to Whole Foods and try Alyssa’s Healthy Oatmeal Bites- they're incredible. Simple ingredients and only a short list of them. If you have the time, try this recipe!  These are perfect if you're looking for a sweet treat that is light and doesn't make you lethargic or wreck your healthy eating train. Cheers! 

Healthy Oatmeal Bites

SERVINGS: 4

PREPPING TIME: 15 MIN

COOKING TIME: 10 MIN

Ingredients

  • 3 Tbsp Coconut Oil

  • 6 Medjool Dates

  • 2 Tsp Vanilla

  • 1 Egg

  • 3 Tbsp Oat Flour

  • 1/2 tsp baking soda

  • 1 Cup Rolled Oats

  • Unsweetened Coconut Flakes

  • 2 Tsp Chia Seeds

  • Dash of Salt and Cinnamon

  • Optional Cranberries or Raisins

Directions

  1. Pre heat oven to 325 Degrees

  2. Melt Coconut Oil

  3. Blend coconut oil, dates, and vanilla in blender

  4. Empty contents of blender into bowl

  5. Stir in egg

  6. Add Oat Flour, Oats, Coconut Flakes, Raisins, Chia, Baking Soda, Salt and Cinnamon

  7. Stir

  8. Scoop into cookies and bake for about 10 mins or until lightly browned

    Notes

Sometimes dates stick to the side of the blender so may have to stop  and shake the blender a few times until blended smooth. If you can't be bothered to break out the blender chop dates finely. When I do this I like to add 2 Tbsp coconut sugar so the entire cookie has sweetness. Butter is also works if you don't have coconut oil.
